Restomod vs numbers matching, where do you land?

Ongoing debate with a friend. He says never touch a numbers matching car, I say a tasteful restomod you actually drive beats a trailer queen. Where is the line for value?

Numbers matching for the blue chip stuff, restomod for the rest. Just do not cut up something genuinely rare.
